Chicken Cordon Blue

Butterfly the breasts by halving the breast lengthwise from the edge in through almost to the other edge to where you can lay the breast open like a book.

Lay 2 pieces of ham over the chicken.

Put 1/2 ounce blue cheese in the middle.

Wrap the ham over the cheese. Carefully fold the chicken in two covering the ham.

Take one piece of bacon and, beginning at one end start wrapping the chicken to the center. Attach the bacon with a toothpick. Take the next piece of bacon and wrap around the chicken starting at the opposite end and attach with toothpick in the center.

Place wrapped chicken in an oven proof skillet that was greased with butter, coconut oil, or bacon grease.

Brown bacon on all 4 sides.

Place into a preheated oven set to 325F and bake for 45 minutes or until chicken juices run clear. Let sit for 10 minutes.
