Bacon Cheddar Explosion

Preheat oven to 375F.

Weave the bacon, laying 15 pieces that are vertical and weaving the rest horizontally, cutting 3-4 pieces in half to fill in the rest.

Add the cheese to the bacon leaving about a 1 ½ inch gap from the edge. Add the spinach on top the cheese and press down to compress it some. Sprinkle the southwest chipotle seasoning on the spinach. Roll the weave slowly. Make sure it stays tight. Some cheese may fall through but don’t worry about it. Sprinkle the table seasoning to the outside if you’d like.

Place on a baking sheet lined with parchment paper. You can place it on a cooling rack over the baking sheet (I usually don’t). Tuck the ends under.

Bake 60-70 minutes without opening the oven door. The bacon should be very crisp on top when finished. Let cool before moving off the sheet or rack.
